Ingredients

  • 150 g Silken tofu
  • 15 g Mirin
  • 6 g Vinegar
  • 7 g Sugar
  • 1 g Salt
  • 150 g Rice flour
  • 9 g Baking powder
  • to taste Olive oil
  • to taste Salt
  • to taste Grated cheese
  • 10 Tomatoes
  • a lot Love

Instructions

  • Beat the silken tofu with a whisk until smooth.
  • Add the mirin, vinegar, sugar, and salt to step 1 and mix well.
  • Sift the rice flour and baking powder together.
  • Combine the mixture from step 2 with the sifted flour and baking powder from step 3, with plenty of love. Place on parchment paper, drizzle with olive oil, and spread evenly.
  • Use your fingers to poke holes in the dough. Sprinkle with grated cheese and salt, then place halved cherry tomatoes on top.
  • Bake at 200℃ for 15 minutes.
  • Once baked, brush with olive oil.

Notes

Rice flour is gluten-free, making the dough less cohesive. Therefore, baking powder is used instead of yeast, and adding tofu and vinegar creates a chewy bread texture.
