Rice Flour Focaccia

Ingredients
- 150 g Silken tofu
- 15 g Mirin
- 6 g Vinegar
- 7 g Sugar
- 1 g Salt
- 150 g Rice flour
- 9 g Baking powder
- to taste Olive oil
- to taste Salt
- to taste Grated cheese
- 10 Tomatoes
- a lot Love
Instructions
- Beat the silken tofu with a whisk until smooth.
- Add the mirin, vinegar, sugar, and salt to step 1 and mix well.
- Sift the rice flour and baking powder together.
- Combine the mixture from step 2 with the sifted flour and baking powder from step 3, with plenty of love. Place on parchment paper, drizzle with olive oil, and spread evenly.
- Use your fingers to poke holes in the dough. Sprinkle with grated cheese and salt, then place halved cherry tomatoes on top.
- Bake at 200℃ for 15 minutes.
- Once baked, brush with olive oil.
Notes
Rice flour is gluten-free, making the dough less cohesive. Therefore, baking powder is used instead of yeast, and adding tofu and vinegar creates a chewy bread texture.
