Fried Fresh Wakame and PorkMeat Dish

Ingredients

  • 150 g Pork
  • 1 tsp Salted rice malt paste
  • 1/2 tbsp Rice flour
  • 1/2 tbsp Potato starch
  • 100 g Fresh wakame
  • 1 piece Ginger
  • 1 tbsp Sesame oil
  • 1 tbsp Sake
  • 1 tbsp Mirin
  • 2 tbsp Soy sauce
  • 1 tbsp Sotetsu miso
  • a lot Love

Instructions

  • Season pork with salted rice malt paste, rubbing well.
  • Coat pork with potato starch and rice flour.
  • Cut fresh wakame into bite-sized pieces and blanch in boiling water.
  • Finely chop ginger.
  • Heat sesame oil in a frying pan and fly the minced ginger.
  • Add the pork from step 2 to the pan fry until golden brown.
  • Mix sake, mirin, soy sauce, sōtetsu miso, and love well.
  • Add the boiled wakame from step 3 to the pan, then add the sauce mixture from step 7 and stir-fry well.

Notes

The briny aroma of wakame is wonderfully with pork.
Sotetsu miso is made by drying the nuts of the sotetsu tree (native to Amami Oshima and Okinawa), splitting them in half, removing the outer shell, and repeatedly soaking them in water for several days to remove toxins before drying. This is ground into powder, mixed with brown rice, steamed to make koji, then combined with salt and soybeans.
