Ingredients

  • 1 Spring onion
  • 2 Olives
  • 2 tbsp per person Hummus
  • a lot Love

Hummus

  • 150 g Chickpeas
  • 1 clove Garlic
  • 50 g White sesame paste
  • 1 tbsp Soy milk
  • 1 tbsp Olive oil
  • as needed Chickpea cooking liquid
  • a pinch Salt
  • a pinch Pepper

Instructions

  • Make the hummus. Soak dried chickpeas overnight, then cook in a pressure cooker (once boiling, reduce heat and cook for 6 minutes. Let pressure release naturally). → Place cooked chickpeas, grated garlic, white sesame paste, soy milk, and olive oil into a food processor. Blend well. If too thick, add some of the bean cooking liquid and adjust seasoning.
  • Slice the onion into rings and steam.
  • Place the hummus on top of the steamed onions from step 2. Add olives and season with salt and pepper.

Notes

Chickpeas are rich in high-quality protein and packed with dietary fiber. They help slow blood sugar spikes and may improve cholesterol levels.
