Ingredients

  • 2 Eggs
  • 60 g Butter
  • 1 large can Canned tomatoes (crushed)
  • 10 g Basil
  • 40 g Almond flour
  • 25 g Rice flour
  • 25 g Mirin lees
  • a little Salt
  • a lot Love

Instructions

  • Separate eggs into whites and yolks.
  • Finely chop basil.
  • Sift rice flour and almond flour.
  • Cream butter using a speed cutter.
  • Add egg yolks, mirin lees, canned tomatoes, and love to step 4. Mix further.
  • Add the chopped basil from step 2 to the mixture in step 3.
  • Beat the egg whites until stiff peaks form, then add salt.
  • Mix the dry ingredients from steps 5 and 6 in the speed cutter, then gently fold in the whipped egg whites from step 7.
  • Divide into 5 portions and bake at 170℃ for 20 minutes.

Notes

This is a healthy cake using mirin lees instead of sugar.
