Basil Cake

Ingredients
- 2 Eggs
- 60 g Butter
- 1 large can Canned tomatoes (crushed)
- 10 g Basil
- 40 g Almond flour
- 25 g Rice flour
- 25 g Mirin lees
- a little Salt
- a lot Love
Instructions
- Separate eggs into whites and yolks.
- Finely chop basil.
- Sift rice flour and almond flour.
- Cream butter using a speed cutter.
- Add egg yolks, mirin lees, canned tomatoes, and love to step 4. Mix further.
- Add the chopped basil from step 2 to the mixture in step 3.
- Beat the egg whites until stiff peaks form, then add salt.
- Mix the dry ingredients from steps 5 and 6 in the speed cutter, then gently fold in the whipped egg whites from step 7.
- Divide into 5 portions and bake at 170℃ for 20 minutes.
Notes
This is a healthy cake using mirin lees instead of sugar.
