Multi-layered vegetable soup,

Ingredients
Stewed vegetables
- 4 Shiitake mushrooms
- 2 Onions
- ½ Carrot
- 2 g Salt
- 50 cc Water
Soup
- 300 cc Kelp broth
- 2 tbsp Simmered vegetables
- 1 tbsp Cooking wine
- 1/2 tbsp White soy sauce
- 1/2 tsp Salt
- 50 cc Sweet sake
- 1/4 Spring onion
- a lot Love
Instructions
- Put 1g of salt in a pot, add sliced shiitake mushrooms, sliced onion and sliced carrot in that order, add water from the end and cook for 20 minutes to make a layered stew (it is ready when the carrot becomes moist).
- Add the layered stew, sake, white soy sauce, salt,sweet sake, and love to the broth and adjust the seasoning.
- Add coarsely chopped green onions on top.
Notes
*This is a method of cooking that brings out the flavor of each vegetable. Basically, cook the vegetables slowly without peeling them.
