Okonomiyaki with bean sprouts and chives with ume sauce

Ingredients
- 4 spring roll skins
- 1 tbsp sesame oil
- 1/2 pack bean sprouts
- 4 chives
- 1/2 tsp salt
- 20 g melted cheese
- 2 tbsp plum jam
- 4 tbsp barley miso
- 2 tbsp mayonnaise
- A lot love
Instructions
- Put sesame oil in a frying pan.
- Cut bean sprouts and chives into 1 cm pieces and sprinkle with salt.
- Lay two pieces of spring roll skin on the pan.
- Place the bean sprouts and chives from step 2 on top of the spring rolls from step 3.
- Put melted cheese and love on top of the vegetables, cover with 2 more spring rolls and brush with water.
- When browned, turn over and grill further.
- When both sides are done, remove from heat and cut into pieces.
- Spread a mixture of ume jam, barley miso and mayonnaise on the top and serve.
Notes
The okonomiyaki will be very firm, which is different from rice flour or wheat flour.
Ume miso is very refreshing.
