Spinach Soy Milk Soup
Servings: 2 serves
Cost: 300yen
Ingredients
- 80 g spinach
- 1/4 apple
- 1/4 onion
- 1 tbsp rice oil
- 150 ml soup stock
- 150 ml soy milk
- 2 tsp miso
- A handful of walnuts
- A lot of love
Instructions
- Make soup stock with kombu (kelp).
- Boil spinach.
- Finely chop onion and cook.
- Add apple slices to broth and simmer until softened.
- Put 4 into a blender and add soy milk.
- Transfer 5 to a pot and season with miso and lovePour 6 into a bowl and garnish with roasted walnuts.

This green soup is perfect for Christmas!
