Spinach Soy Milk Soup

Ingredient

  • 80 g spinach
  • 1/4 apple
  • 1/4 onion
  • 1 tbsp rice oil
  • 150 ml soup stock
  • 150 ml soy milk
  • 2 tsp miso
  • A handful of walnuts
  • A lot of love

Instructions

  • Make soup stock with kombu (kelp).
  • Boil spinach.
  • Finely chop onion and cook.
  • Add apple slices to broth and simmer until softened.
  • Put 4 into a blender and add soy milk.
  • Transfer 5 to a pot and season with miso and love
    Pour 6 into a bowl and garnish with roasted walnuts.
