Aromatic Sushi with Edamame

Equipment
- Rice cooker
Ingredients
- 2 cups rice
- 1 bag (200g) edamame
- 4 myoga (Japanese ginger)
- 1 tsp cumin seed
- 40 g ginger (pickled in sweet vinegar)
- 2 tsp white sesame seeds
- 6 basil leaves
- A lot love
Sushivinegar
- 2 tablespoons edamame juice
- 1 white vinegar
- 1 tbsp lemon juice
- 1 olive oil
Instructions
- Cook rice for sushi
- Cut the edamame at both ends and steam. Then remove all of the edamame from the pods and mix with 1/2 a pinch of salt.
- Cut myoga into small pieces and dip in sweet vinegar.
- Roughly chop the pickled ginger.
- Stir-fry cumin seeds in 1 tbsp of rice oil.
- Mix sushi vinegar well and mix into the rice.
- Add ginger of 4, cumin seeds of 5, and half the steamed edamame to the 6.
- Place 7 on a bowl and top with shredded basil, myoga of 3, half of the edamame, and white sesame seeds
Notes
This sushi is refreshing with Japanese herbs.
