Fried Scabbard Fish

Ingredients

  • 1 scabbard fish
  • 2 tbsp soy sauce
  • 2 tbsp sake
  • 1 tbsp mirin(sweet cooking sake)
  • A piece ginger
  • A clove garlic
  • 2 tbsp potato starch
  • 100 ml rice oil
  • 1 kabosu orange
  • A lot love

Instructions

  • Make fillet scabbard fish into three pieces.
  • Cut 1 into pieces and marinate in a mixture of soy sauce, sake, mirin, grated ginger, garlic and love for 15 minutes.
  • Drain off the liquid from 2, coat evenly with potato starch ,and deep-fry in rice oil.
  • Plate with thin slices of sudachi.
