Kura-cooking in May

 

 

Many kinds of flowers were blooming in the garden of Kura-cooking. Every students really enjoyed them when they came to have cooking lessons.


I made special dishes to cerebrate for new era “Reiwa”. When I went to Bali Island to learn Indonesian dishes I noticed I could make a new style of combining Japanese dishes and Indonesian dishes. So I used a lot of Indonesian spices and serve dishes like Bali style. It was a really gorgeous Japanese meal.
All students were really interested in these dishes.
I had a Strawberries afternoon tea class. We used a lot of strawberries so we enjoyed scent of strawberries while making scones and cakes.


I also opened one day tea room using many strawberries.
English couple came to Kura. They were the first students from England. They also liked my tea with milk and cookies.


Welcome tea was the “Mangostine tea” from Bali Island. Mangostine powder made of all skins, seeds, and fruits. It was sugar free but it was sweet enough, all students liked it. Students told me there seemed to be sugar in it.

 
I made many kinds of flower arrangement on the table, every arrangement was beautiful.

 
Japanese dishes: Red quinua rice, Tofu with century eggs, cooked butterbur and pork, Marinated red onion, Tomato and soya soup, White cloud ear mushroom and Lotus fruits sweets.


Red quinua is millets but has a very good taste. Red quinua and white rice was just like Japanese red and white sticky rice called Sekihan used for celebrations.


Century egg isn’t common in Japan, but mix honey ginger, leek, and century egg was good with tofu. Students said, “It is a Japanese dish, isn’t it?”
Cooked butterbur and pork was the recipe for people who don’t like butterbur.
Butterbur has original strong scent, but it was good for health. So I want all people to eat it. I served it on butterbur leaves like banana leaves in Bali.


Marinated onion was from my garden. It was good with salmon.
Tomato and soya soup was easy to make and good for summer season.
White cloud ear mushroom and Lotus fruits sweets was just like sweet red beans soap.
Cloud ear and lotus fruits isn’t Japanese food, but the dish was Japanese.

 
Afternoon tea’s theme was strawberries. Red fresh berries were so cute and they made us happy.


English couple loved rolled shaped Sushi and grilled eel.
