Winemaking Experience in Ono, Fukui: From Vineyard to Homemade Jam

I visited Hakusan Winery in Ono City, Fukui Prefecture to experience red wine making. The wild grapes grown here are so sweet that they’re delicious even eaten fresh—and that sweetness is what makes the wine so good.

We harvested the grapes, placed them into a machine, turned the handle to separate the fruit from the stems, and crushed the grapes. Then we mixed the juice and fruit together. The next day, we stirred them again and added yeast. From there, the mixture needs to be stirred every day as it matures.

It was my first winemaking experience, and I was so excited—such a wonderful opportunity!

On the second day, I also harvested a variety of grapes called Steuben. Of course, they were tasty as they were, but their color was so beautiful that I decided to make juice and jam. The hue was delicate and lovely, while the flavor carried the full strength of the grapes.

For breakfast, I enjoyed the grape juice mixed with soda water and spread the jam on a slice of fresh baguette. With such a meal, I felt ready to take on the day!
