In February’s cooking class
February’s cooking lesson was about dishes for The Girls’ Festival.
I served a home-made Yuzu hot drink as a welcome drink.
We made 7 dishes:
Tea pork with Japanese sauce
Boiled radishes, carrots, and taros with tuna and miso
Gratin of avocado and Kimchi
Dumplings of lily bulbs
Steamed egg custard with “hamaguri” (big clam).
Peach flavored rice
Jelly of Amazake (a sweet drink made from fermented rice)
They were easy to make so every student would be able to make them by themselves for their Girls’ festival celebration.
The students enjoyed making dumplings of lily bulb, which are of 3 colors: green, pink, and white. They are the colors of the Girls’ festival. In many Japanese sweet shops there are many diamond shape rice cakes of the color which is called “Hishimochi”
The Girl’s festival is also called the “Peach Festival”, so we make peach-flavored rice with dried peaches.
Big clams are also a Girls’ Festival food. They tasted good and after eating we make dolls from the shells.
Jelly of sweet sake and peach tea was good combination, too.
My menu for the Girls’ festival was successful!
The Afternoon tea class was for first-time students.
So we made simple English sweets. Every student enjoyed making them. The peach jam was especially very good!
Scones with peach jam and clotted cream were wonderful!
