August Japanese Cuisine Class: Refreshing Dishes to Beat the Summer Heat

We’ve just finished our August Japanese cuisine class, and I was so happy to see that everyone enjoyed the recipes—perfect for staying energized in the summer heat.
The menu featured:
- Curry-flavored sautéed horse mackerel (aji)
- Blanched Malabar spinach with seasoning
- Tempura fritters of jurokusasage (long green beans)
- Herb-scented sushi
- Chilled barley miso soup
- Matcha cakes with sweet plum paste
Even a student who said she had no appetite was able to finish everything. We also talked about meal ideas for when you don’t feel like eating.
