In April’s cooking class

May 5th is the Boy’s Festival, so last month we made some dishes for it.
The welcome drink was orange juice with wolf berries which was made of oranges from my garden.
Some people drank it hot, and other drank cool. Both were good. 
April’s menu: 
Grilled Spanish mackerel with egg yolk, cooked new onions in soup, helmet- shaped spring roll,
cooked yellow rice with black beans, spring cabbage with red Japanese basil,
butterbur and seaweed egg soup, mugwort dumplings
We grilled Spanish mackerel with egg yolk. The egg yolk was a little sweet and the mackerel was really soft.
We made cooked new onions with a little soup. We used whole onion because now is the best season.
The helmet- shaped spring rolls were like the Japanese helmets of The Boy’s Festival.
Making helmets with spring roll paper was easy, but every student looked nervous, because most had forgotten how to make helmets.
We put minced meat in the helmets made from spring roll paper. It is good for packed lunches.
I cooked yellow rice with black beans. It was a special rice for the Boy’s Festival.
They say yellow protects against bad things
Spring cabbage with red Japanese basil was simple and colored pink.
We enjoyed eating butterbur and seaweed egg soup. The butterburs were chewy. and the dessert was mugwort dumplings made of tofu.
