Azuki Bean Miso

While looking through an old book, I came across a word I hadn’t known before—azuki bean miso. Curious, I looked it up and decided to try making it right away.
I happened to have some good azuki beans on hand, so I mixed them with rice koji and salt. Azuki bean miso can be enjoyed after just a few months, which makes me very excited to see how it turns out.
If it turns out well, I’ll be happy to let everyone have a taste.
