Black Bean Scones
If you have leftover black beans from New Year’s dishes, why not try this?

The cooking liquid is used as well, giving the scones a gentle purplish color. I made them into a scone sandwich, which has become quite popular recently.

The filling is a mixture of mashed black beans and mascarpone cheese.
They turned out wonderfully delicious.
