- 400 g rice
- 2 eggplants
- 2 eggs
- 20 g dried baby sardines
- A pinch of salt
- 1 tsp white sesame seeds
- 4 tbsp sesame oil
- A lot of love
Roughly chop eggplant.
Put 2 tablespoons of sesame oil in a frying pan and fry eggplant until browned, then remove from pan.
Add 2 tablespoons of sesame oil to the pan, add rice and egg, and stir-fry until crispy.
Add the fried eggplant, dried baby sardines and love to the pan and stir-fry.
Check the taste and add salt if it is too light.
*Sprinkle white sesame seeds on top.
Fried rice made with summer vegetables is a nutritious and well-balanced dish!
