Apple Soy Milk Clafoutis

- 1/2 apple
- 300 ml soy milk
- 2 eggs
- 60 g sugar
- 50 g rice flour
- (15 blueberries)
- A lot of love
Cut apples into thin slices, leaving the skin on.
Gently mix soy milk, eggs and sugar.
Add rice flour and love to the mixture and mix well.
Put the apples in a heatproof container.
If available, add 3 to 4 and put blueberries on top.
Bake at 170 degrees for 35 minutes.
Cool before serving.
This is a French home-style dish. It was originally made in the Limousin region with black cherries.
