Bean sprouts and buckwheat noodles with chives sauce

Ingredient

  • 1 bag Bean sprouts
  • 180 g Buckwheat noodles
  • 2 tbsp Hot miso
  • a lot Love

Leek sauce

  • 1 bunch Sprig chives
  • 1 piece Ginger
  • 2 tbsp Sake (cooking wine)
  • 2 tbsp Soy sauce
  • 1/3 tsp salt
  • 2 tsp Sesame seeds
  • 1 tbsp Sesame oil

Instructions

  • Chop leek and ginger.
  • Put sesame oil in a pan and stir-fry chopped ginger.
  • Add chopped chives, sake, mirin, soy sauce, salt and boil.
  • Steam bean sprouts.
  • Boil buckwheat.
  •  Mix 3, 4, and5 with love well and serve.
  • Add sesame seeds and hot miso on top.

Notes

This is a salad-style soba noodle. In summer, this dish can be made with Somen noodles or cool pasta.
