Ingredient

  • 250 g rice flour
  • 15 g almond powder
  • 6 g baking powder
  • 1/2 tsp salt
  • 50 g sugar
  • 1 egg
  • 70 g soy milk yogurt
  • 50 ml soy milk
  • 70 g blueberries (reserve 12 for garnish)
  • A lot of love

Instructions

  • Sift rice flour, almond powder and baking powder.
  • Mix salt, sugar, eggs, soy yogurt and soy milk (do not add all of it).
  • Mix 1 and 2 well. (Add milk checking the consistency of the dough)
  • When 3 is well mixed, mix in blueberries. (reserve some for garnish)
  • Cut out scone shape with a scone cutter.
  • Decorate the top with blueberries and brush with milk.
  • Bake at 190 degrees for 20 minutes.
