Rice Flour Cake with Ume Jam

- 2 Eggs
- 30 g Sugar
- 80 g Rice flour
- 1 tbsp Baking powder
- 20 g Rice oil
- 50 g Plum jam
- 1 tbsp Powdered sugar

Beat eggs with a hand mixer.
Mix 1 with sugar.
Add rice oil to 2.
Sift rice flour and baking powder.
Mix 3, 4 and love well.
Put 1 large portion of 5 into the muffin tin, add the plum jam, and then add another 1 large portion of 5
Bake at 170 degrees for 20 minutes.
Sprinkle powdered sugar on top when cooled.
The slightly sour jam made during the rainy season goes well with rice flour cakes.
This cake is perfect for the rainy season!
