Multi-layered vegetable soup,

Ingredient

Stewed vegetables

  • 4 Shiitake mushrooms
  • 2 Onions
  • ½ Carrot
  • 2 g Salt
  • 50 cc Water

Soup

  • 300 cc Kelp broth
  • 2 tbsp Simmered vegetables
  • 1 tbsp Cooking wine
  • 1/2 tbsp White soy sauce
  • 1/2 tsp Salt
  • 50 cc Sweet sake
  • 1/4 Spring onion
  • a lot Love

Instructions

  • Put 1g of salt in a pot, add sliced shiitake mushrooms, sliced onion and sliced carrot in that order, add water from the end and cook for 20 minutes to make a layered stew (it is ready when the carrot becomes moist).
  • Add the layered stew, sake, white soy sauce, salt,sweet sake, and love to the broth and adjust the seasoning.
  • Add coarsely chopped green onions on top.

Notes

*This is a method of cooking that brings out the flavor of each vegetable. Basically, cook the vegetables slowly without peeling them.
