Stewed vegetables
- 4 Shiitake mushrooms
- 2 Onions
- ½ Carrot
- 2 g Salt
- 50 cc Water
Soup
- 300 cc Kelp broth
- 2 tbsp Simmered vegetables
- 1 tbsp Cooking wine
- 1/2 tbsp White soy sauce
- 1/2 tsp Salt
- 50 cc Sweet sake
- 1/4 Spring onion
- a lot Love
Put 1g of salt in a pot, add sliced shiitake mushrooms, sliced onion and sliced carrot in that order, add water from the end and cook for 20 minutes to make a layered stew (it is ready when the carrot becomes moist).
Add the layered stew, sake, white soy sauce, salt,sweet sake, and love to the broth and adjust the seasoning.
Add coarsely chopped green onions on top.
*This is a method of cooking that brings out the flavor of each vegetable. Basically, cook the vegetables slowly without peeling them.
